Hello and best wishes for the month of May. This is my brunch. I used one egg for this omelette because (excuse me) I needed room for the cocktail.
Easy cheesy, omelette pizza:
- Sautée plum tomatoes with sausages and garlic.
- Cook an omelette on one side, flip it.
- Top the cooked side with the tomatoes and sausage.
- Top that with shredded Gouda cheese.
- Reduce heat and cover skillet until the cheese melts.
- Photograph right away.
- Eat omelette while it is hot.
The cooking time is short. If you’ve made an omelette pizza before, I’d love to hear from you.
What’s in this?
One egg; sausages – diced; plum tomatoes – halved (green, orange, purple); black olives – sliced; finely shredded Gouda cheese; garlic – grated; rock salt (a little); butter/sesame seed oil.
My dessert of choice is Greek yogurt and raspberry sauce, which mGm will appreciate. The May Day cocktail, fresh cut strawberries in blood orange juice and sparkling wine, is for Work in Progress.

Thank you, Ayesha. It was such a fun picnic, I had to share it. Last Halloween, I was guest chef at a cooking club and taught 20 people how to make the oven version of this. It was hectic but fun. xo

You’re not going to believe this, but so do I. I cook the way I paint: throw a few ingredients together, paying attention to the colour. Dash of salt to taste. It is always an experiment for me.

Whoa! I never thought about making an omelette pizza before! lol This is interesting! I will try making it next time. I like cooking simple things that are tasty and this fits in the category haha. I’ll take a photograph and post it next time I have the chance. Though, it may not look as good lol, and I may not have the side stuff to accompany it but oh well. I’ll start one at a time.

Thanks, Anon. I’m an artist and have hosted my fair share of lunch and dinner parties so I have an unfair advantage when it comes to presentation. Remember to sautée the toppings first and watch the omelette so it doesn’t burn after you flip it.

As for lunch/dinner parties, there are many formats. I like to cook but usually, I host guests at restaurants. This allows us to create a special course beforehand. At home, I try original recipes with lots of wine, mostly red and usually from South Africa or Spain. Dessert might be potluck.

Oooh, that’s true. Wow, so many different types of food! I don’t know if I’ve had Jamaican food or Nepalese. I’m not too picky with my food, but good tasting food will always be good tasting lol.

While I am not a foodie in that I don’t have a refined palette, I’m all about the presentation and can’t eat a dish if it isn’t visually appealing. Take yesterday for example. My cousin and I went to brunch after our Breast Cancer Walk and I ordered a typical breakfast of eggs, bacon, hashed browns and pancakes. I had to ask for crispy bacon strips because the first round was rubbery. The second round was crispy but the strips were all curled up. I know it sounds silly but I like my bacon strips straight, this is how nutty I can be when it comes to food.

Had a big laugh reading that, Steph. Sounds like the perfect brunch. I will remember not to curl the bacon. Besides, after doing all that work for the community, you deserve to have straight bacon. I make a mean gluten free pancake, too. Should be fun!

I was laughing when it happened at the brunch and when I explained the situation to you. The things we stress over hahaha. I mean there are people who have serious issues and I’m irritated over curled bacon – jeesh!

Hi Sabiscuit! I used to make omelette pizzas all the time! I don´t use sausage, sometimes goat cheese, oregano, parmesan…I love your idea of rock salt! Butter with sesame oil? Never would have thought of that combo, I only use olive oil. Thanks for reminding me about this easy and beautiful treat! Going to make it this rainy Monday morning and I’ll try to take a pic of it before I gobble it down! Thanks for the inspiration!

Hello Nadia. Thank you. The strawberries really soaked up the sparkling wine. I left it in the fridge for 30 minutes and they were quite fizzy.

SB, that omelette is rather inviting with the unctuous cheese and plump tomatitos. And yes, I do appreciate the swirled yogurt as equally as that cocktail you have going on there. I do have a weakness for blood oranges and bubbles. You eat so well! Extra credit for the funsome picnic sheet.

And when I noticed that it was Yokai (Spirit) Watch, I thought, there’s no way I’m not going to post this. I am very happy you love the plumy tomatitos. The green ones balanced out with the savoury egg and the sharp gouda. Yum love.
