Omelette Pizza – Easy cheesy breakfast

Omlette pizza brunch with Yokai Watch

Hello and best wishes for the month of May. This is my brunch. I used one egg for this omelette because (excuse me) I needed room for the cocktail.

Easy cheesy, omelette pizza:

  • Sautée plum tomatoes with sausages and garlic.
  • Cook an omelette on one side, flip it. 
  • Top the cooked side with the tomatoes and sausage.
  • Top that with shredded Gouda cheese.
  • Reduce heat and cover skillet until the cheese melts.
  • Photograph right away.
  • Eat omelette while it is hot.

Greek yogurt with raspberry sauce

The cooking time is short. If you’ve made an omelette pizza before, I’d love to hear from you.

What’s in this?
One egg; sausages – diced; plum tomatoes – halved (green, orange, purple); black olives – sliced; finely shredded Gouda cheese; garlic – grated; rock salt (a little); butter/sesame seed oil.

My dessert of choice is Greek yogurt and raspberry sauce, which mGm will appreciate. The May Day cocktail, fresh cut strawberries in blood orange juice and sparkling wine, is for Work in Progress.

Looks delicious SB. We had an omelette for breakfast today too. It would have been nice on a pizza – I’ll have to try that.

Hello Leslie. Thank you so much for visiting my brunch party. I think the key is to put your favourite pizza toppings on top in just a moderate proportion or else the omelette will be overburdened. I almost had an accident getting this out of the skillet. I should have layered the cheese under the toppings, too. xo

Looks like an excellent alternative to my daily cocktail peanuts, cheddar and black coffee! Happy May Day and Happy Lei Day! I only know it’s Lei Day because my last name is Lei. 😉 ❤

Thank you. He looks like Pokemon to me, too. It’s a small Yokai Watch vinyl picnic blanket. I got two as a gift from the convenience store just minutes before I returned home to cook. I was worrying about the setup when they were handed to me, out of the blue. The blanket gave me a composition space to work with so I could capture fast and eat up.

I munched on the chocolate and pink grapefruit gummy hearts throughout the day. I hear that chocolate is good for your health. I also know that in some countries, chocolate is eaten at breakfast. I was naughty and didn’t go for bitter chocolate. (Spanks self). Thanks for this scrumptious comment.

You had me at gouda cheese! Amazingly yummy looking! We were so lazy this morning that my Hubs went to the store to get donuts for the kids and I had my favorite yogurt and coffee.
When I was young, I remember being one to dance around the Maypole. The streamers were pastel in color. Love that memory. Happy May Day!

Thank you!! The maypole dancing is quite complicated. I remember watching them too when I was very young. Pastel streamers knitted together is quite right. Your Sunday morning sounds lovely. Here’s hoping you’ll enjoy many more relaxing weekends this month.

Ha ha ha Rajiv. Lovely idea. It’s a lot of protein. I’d be full for days. When I guest hosted a cooking class last year, the high maintenance super cheese oven version needed three eggs. One pizza served two people. They were stuffed after.

Yum That puts me in mind of a pizza recipe that was ubiquitous back in early Atkins days.
You nuked pepperoni slices on paper towels to remove the excess fat, overlapped them to cover the bottom of a pan, and topped with a custard of eggs, cream cheese, parm and spices. After a partial bake, you topped it with whatever pizza-ish things you wanted and baked to finish. There are some similar recipes around the interwebs (cream-cheese crust pizza), but, I can’t find the exact one with the naughty orange pepperoni slices (maybe for a good reason — or maybe because Atkins now sells pepperoni pizza in the freezer aisle). The recipe I remember was for two. Two whats? Two hours, perhaps. Mileage may have varied with cocktails.

Yours is positively elegant by comparison — I love how it looks slightly rustic and delicate, and the super-fresh toppings — although I am oddly distracted by that cocktail pitcher. Have sausage and eggs in fridge — suddenly quite hungry! There might be sparkling something to keep the plate company.

Hello, SOB. Thank you so much for this comment. I apologise for the late reply. There is no coffee for me. I am known to suffer severe withdrawal symptoms so I took that out. My beverage of choice in the morning is either hot cocoa or spicy milk tea (chai). I hope you’ve had a great weekend. Wishing you a lovely week ahead.
